About The Baker

tans'i! Emilie nitsiyikason (Hi! I'm Emilie) — a baker based in Edmonton with a love for homemade comfort food, cozy kitchens, and recipes that bring people together. I am so lucky to be Indigenous and have mixed ancestry of Irish, English, Norwegian (and probably more) as well. I like to think of myself as super Canadian. 

I learned to bake mostly from my grandma(s), where food was never just food — it was connection, care, tradition, and community. Growing up, recipes for things like bannock and flapjacks were rarely written down. Ingredients were added a little at a time until everything "felt right," and I was always told that was the ancestors helping guide us through food. Those moments shaped the way I still bake today: with intuition, comfort, and a lot of love. Over time, baking became one of the ways I reconnected with my culture and heritage, especially through bannock: something simple, comforting, and deeply meaningful.

What started as baking for family and friends slowly turned into sharing that experience with others through small-batch bannock, baking mixes, and homemade jams inspired by both tradition and everyday comfort.

Everything is made with the goal of feeling approachable, warm, and homemade — whether you’re picking up fresh bannock for your table or making your own at home for the first time.
